  • 1 lb ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 2 cups beef broth
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 cups elbow macaroni, uncooked
  • 1 cup shredded cheddar cheese (optional, for topping)
  • 2 tbsp fresh parsley (optional, for garnish)

Instructions

  • In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Drain excess fat.
  • Add the diced onions and minced garlic, cooking until softened, about 3-4 minutes.
  • Stir in the diced tomatoes, tomato sauce, beef broth, paprika, Italian seasoning, bay leaf, salt, and pepper. Bring to a simmer.
  • Add the uncooked elbow macaroni to the pot and stir to combine. Cover and cook for 12-15 minutes, stirring occasionally, until the pasta is tender.
  • Remove the bay leaf and adjust seasoning if necessary.
  • Serve hot, topped with shredded cheddar cheese and fresh parsley if desired.
