Ingredients

  • 1 lb ground turkey
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp oregano
  • Salt and pepper to taste
  • 1 cup chicken broth
  • Optional toppings: shredded cheese, sour cream, cilantro

Instructions

  • In a large pot, cook the ground turkey over medium heat until browned. Remove and set aside.
  • In the same pot, add onion, garlic, and bell pepper. Sauté until softened.
  • Add the browned turkey back to the pot along with kidney beans, black beans, diced tomatoes, tomato sauce, chili powder, cumin, paprika, and oregano. Stir well.
  • Pour in the chicken broth and bring the mixture to a simmer. Lower the heat and let it cook for 30-45 minutes, stirring occasionally.
  • Season with salt and pepper to taste. Serve hot with your favorite toppings.

Notes

  • For a spicier chili, add a chopped jalapeño or extra chili powder.
  • This chili can be made ahead of time and stored in the refrigerator for up to 3 days or frozen for up to 3 months.
