  • 3 cups cooked chicken, shredded
  • 8 oz rotini pasta (or any short pasta)
  • 1 cup BBQ sauce
  • 1/2 cup ranch dressing
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1/4 cup chopped green onions (optional)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/4 cup crispy bacon bits (optional)

Instructions

  • Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
  • Cook the pasta according to package instructions. Drain and set aside.
  • In a large bowl, mix together the BBQ sauce, ranch dressing, garlic powder, onion powder, salt, and pepper.
  • Add the cooked pasta, shredded chicken, corn, and half of the cheddar and mozzarella cheeses to the bowl. Stir to combine.
  • Pour the mixture into the prepared baking dish. Top with the remaining cheddar and mozzarella cheeses.
  • Bake for 20-25 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and garnish with green onions and bacon bits if desired. Serve hot.

  • You can substitute pulled pork for the chicken for a BBQ twist.
