  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 3 carrots, peeled and sliced
  • 3 potatoes, peeled and cubed
  • 2 celery stalks, chopped
  • 3 cups beef broth
  • 2 tbsp tomato paste
  • 1 tsp Worcestershire sauce
  • 1 tsp thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tbsp flour (optional, for thickening)

Instructions

  1. Heat olive oil in a large pot over medium heat. Brown the beef cubes on all sides, then remove and set aside.
  2. In the same pot, sauté onions, garlic, and celery until softened.
  3. Stir in the tomato paste, thyme, and Worcestershire sauce, cooking for 1-2 minutes.
  4. Return the beef to the pot and add the beef broth, bay leaf, carrots, and potatoes.
  5. Bring to a boil, then reduce to a simmer. Cover and cook for 1.5-2 hours until the beef is tender.
  6. If a thicker stew is desired, mix flour with water to form a slurry and stir into the stew during the last 15 minutes of cooking.
  7. Season with salt and pepper to taste. Remove bay leaf before serving.

  • For added flavor, deglaze the pot with 1/2 cup red wine before adding the broth.
  • Substitute beef chuck with lamb or pork for a different variation.
