For the Crust:

  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted

For the Cream Cheese Filling:

  • 2 (8-ounce) packages of cream cheese, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¼ cup sour cream

For the Blueberry Topping:

  • 2 cups fresh or frozen blueberries
  • ⅓ cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch

For the Crumb Topping (Optional):

  • ½ cup all-purpose flour
  • ⅓ cup brown sugar, packed
  • ½ cup old-fashioned rolled oats
  • ¼ cup unsalted butter, cold and cubed

Instructions

  • Preheat oven to 350°F (175°C). Line a 9x9-inch baking pan with parchment paper.
  • Make the crust: Combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of the prepared pan. Bake for 8-10 minutes, then set aside.
  • Make the cream cheese filling: Beat softened cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla and sour cream. Pour the mixture over the cooled crust.
  • Prepare the blueberry topping: In a saucepan, combine blueberries, sugar, lemon juice, and cornstarch. Cook over medium heat until thickened (about 5 minutes). Let cool slightly, then spread evenly over the cream cheese filling.
  • Optional crumb topping: Mix flour, brown sugar, oats, and cubed butter until crumbly. Sprinkle over the blueberry layer.
  • Bake for 35-40 minutes, until the cream cheese layer is set. Let cool completely, then refrigerate for at least 2 hours before slicing.

Notes

  • Fresh or frozen blueberries can be used for the topping.
  • For a crunchier texture, lightly toast the oats before mixing into the crumb topping.
