  • 1 lb boneless, skinless chicken breasts, diced
  • 1 cup buffalo sauce (or to taste)
  • 1 cup uncooked long-grain rice
  • 2 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1/4 cup cream cheese
  • 2 tbsp butter
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 2 green onions, sliced (for garnish)
  • Ranch or blue cheese dressing (optional, for serving)

Instructions

  • Heat butter in a large skillet over medium heat. Add diced chicken, season with garlic powder, onion powder, paprika, salt, and pepper, and cook for 5-7 minutes until browned and cooked through.
  • Stir in buffalo sauce, coating the chicken thoroughly, then remove the chicken from the skillet and set aside.
  • In the same skillet, add rice and chicken broth. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes, or until the rice is cooked.
  • Once the rice is done, stir in cream cheese and cheddar cheese until melted and creamy.
  • Add the cooked buffalo chicken back to the skillet and mix well. Cook for an additional 2-3 minutes until everything is heated through.
  • Garnish with sliced green onions and serve with ranch or blue cheese dressing if desired.
