  • 1 small head of cabbage, chopped
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • ½ teaspoon black pepper
  • ½ teaspoon salt (optional)
  • ½ teaspoon red pepper flakes (optional)

Instructions

  • In a large pot, heat a little oil and sauté onions, carrots, celery, and bell pepper until softened.
  • Add garlic and cook for another minute.
  • Pour in diced tomatoes and vegetable broth. Bring to a boil.
  • Add cabbage, oregano, basil, black pepper, salt, and red pepper flakes. Stir well.
  • Reduce heat and simmer for 20–25 minutes until all vegetables are tender.
  • Serve hot and enjoy!

Notes

  • You can add other veggies like zucchini or mushrooms.
  • For extra protein, add beans or lean chicken.
