This Cajun Sausage and Rice Skillet is a delicious, one-pan meal bursting with bold Cajun flavors.   • 1 tbsp olive oil
  • 12 oz smoked sausage, sliced
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp Cajun seasoning
  • ½ tsp smoked paprika
  • ½ tsp salt (adjust to taste)
  • ¼ tsp black pepper
  • ¼ tsp red pepper flakes (optional)
  • 2 green onions, sliced (for garnish)

Instructions

  • Heat olive oil in a large skillet over medium heat.
  • Add sliced sausage and cook until browned, about 3–4 minutes. Remove and set aside.
  • In the same skillet, sauté onion and bell pepper until soft, about 3 minutes.
  • Add garlic and cook for 30 seconds until fragrant.
  • Stir in rice, chicken broth, diced tomatoes, Cajun seasoning, paprika, salt, black pepper, and red pepper flakes.
  • Bring to a simmer, cover, and cook for 18–20 minutes until the rice is tender.
  • Stir in the cooked sausage and fluff the rice.
  • Garnish with green onions and serve hot.

Notes

  • Adjust the spice level by adding more or less Cajun seasoning and red pepper flakes.
  • Use andouille sausage for an authentic Cajun flavor.
  • Can be made with brown rice—adjust cooking time accordingly.
