  • 1 lb ground beef

  • 1 tbsp olive oil

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 (10 oz) can red enchilada sauce

  • 1 (14.5 oz) can diced tomatoes, drained

  • 1 (9 oz) package refrigerated cheese tortellini

  • 1 cup shredded Mexican blend cheese

  • 1/2 tsp cumin

  • 1/2 tsp chili powder

  • Salt and pepper to taste

  • Fresh cilantro, for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onion and sauté until soft.

  2. Add ground beef and cook until browned. Drain excess grease.

  3. Stir in garlic, cumin, chili powder, salt, and pepper. Cook for 1 minute.

  4. Add enchilada sauce and diced tomatoes. Bring to a simmer.

  5. Stir in tortellini and cover. Simmer for 5–7 minutes, or until tortellini is tender.

  6. Sprinkle cheese on top. Cover and let melt, about 2–3 minutes.

  7. Garnish with chopped cilantro if desired. Serve hot.

Notes

  • You can use spicy enchilada sauce for added heat.

  • Frozen tortellini can be used but may need extra cooking time.

  • Add bell peppers or corn for extra veggies.
