  • 4 cups riced cauliflower (about 1 large head)
  • 4 large eggs
  • 2 cups mozzarella cheese (or Tex-Mex blend)
  • 3 teaspoons oregano
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • 1 cup (or more) mozzarella cheese for topping

Instructions

  • Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • Steam or microwave the riced cauliflower until tender. Let it cool, then squeeze out excess moisture using a kitchen towel.
  • In a large bowl, mix the cauliflower, eggs, 2 cups mozzarella, oregano, garlic, salt, and pepper until well combined.
  • Spread the mixture onto the prepared baking sheet, forming a rectangle about 1/2 inch thick.
  • Bake for 25 minutes or until golden brown.
  • Remove from oven, top with remaining mozzarella cheese, and bake for another 5-10 minutes until the cheese is melted and bubbly.
  • Let cool slightly before cutting into breadsticks. Serve warm.
