1 lb ground beef
1 cup uncooked white rice
1 small onion, diced
1 green bell pepper, diced
1 tsp garlic powder
1 tsp paprika
2 cups beef broth
1 can (10.5 oz) cream of mushroom soup
1 cup shredded cheddar cheese
Salt and pepper to taste
Instructions
Preheat oven to 350°F (175°C).
In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
Add diced onion, bell pepper, garlic powder, paprika, salt, and pepper. Sauté for 2-3 minutes.
Stir in uncooked rice, beef broth, and cream of mushroom soup. Bring to a simmer.
Transfer the mixture to a greased 9x13-inch baking dish. Cover with foil and bake for 30 minutes.
Remove foil, stir the casserole, and sprinkle shredded cheese on top. Bake uncovered for 10 more minutes or until the cheese is melted and bubbly.
Let rest for 5 minutes before serving.
Notes
For a creamier texture, add ½ cup of sour cream before baking.
