1 cup ketchup
1 cup Sweet Baby Ray’s Hickory & Brown Sugar barbecue sauce
2 lbs lean ground beef
30 Ritz crackers, crushed
2 oz Lipton onion soup mix
2 large eggs
24 oz frozen tater tots
2 cups shredded mozzarella and cheddar cheese blend
1/4 cup real bacon bits
Instructions
Preheat the oven to 350°F (175°C).
In a large bowl, combine ground beef, crushed Ritz crackers, onion soup mix, eggs, ketchup, and barbecue sauce. Mix well.
Press the meat mixture into a greased 9x13 inch baking dish.
Arrange the tater tots in a single layer on top of the meat mixture.
Bake for 45 minutes.
Remove from the oven and sprinkle the shredded cheese and bacon bits over the tater tots.
Return to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
Let it cool slightly before serving.
Notes
You can substitute the cheese blend with your favorite cheese.
Serve with a side salad or steamed vegetables for a complete meal.
Store leftovers in the refrigerator for up to 3 days.
