Cheesy Tater Tot Meatloaf Casserole combines ground beef, cheese, and tater tots for a mouthwatering dish. Perfect for family dinners, this recipe is loaded with flavor from barbecue sauce, onion soup mix, and bacon bits.

  • 1 cup ketchup
  • 1 cup Sweet Baby Ray’s Hickory & Brown Sugar barbecue sauce
  • 2 lbs lean ground beef
  • 30 Ritz crackers, crushed
  • 2 oz Lipton onion soup mix
  • 2 large eggs
  • 24 oz frozen tater tots
  • 2 cups shredded mozzarella and cheddar cheese blend
  • 1/4 cup real bacon bits

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine ground beef, crushed Ritz crackers, onion soup mix, eggs, ketchup, and barbecue sauce. Mix well.
  • Press the meat mixture into a greased 9x13 inch baking dish.
  • Arrange the tater tots in a single layer on top of the meat mixture.
  • Bake for 45 minutes.
  • Remove from the oven and sprinkle the shredded cheese and bacon bits over the tater tots.
  • Return to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  • Let it cool slightly before serving.
