  • 1 ½ cups all-purpose flour
  • ¾ cup almond flour
  • ½ cup sugar
  • 1 egg yolk
  • 1 tsp vanilla extract
  • ½ tsp almond extract
  • ¾ cup butter, softened
  • ½ cup cherry jam
  • Powdered sugar (for dusting)

Instructions

  • Preheat oven to 350°F (175°C).
  • In a bowl, whisk together all-purpose flour and almond flour.
  • In another bowl, cream butter and sugar until light and fluffy. Add egg yolk, vanilla, and almond extract, mixing well.
  • Gradually add dry ingredients to the butter mixture, forming a dough.
  • Roll out dough to ¼-inch thickness on a floured surface. Cut out cookie shapes using a round cutter. For half the cookies, use a smaller cutter to make a hole in the center.
  • Place cookies on a lined baking sheet and bake for 10-12 minutes, or until lightly golden.
  • Cool cookies completely. Spread cherry jam on the whole cookies and top with the cut-out cookies.
  • Dust with powdered sugar before serving.

Notes

  • For a variation, you can use raspberry jam or any other fruit filling.
  • Ensure cookies are completely cool before assembling to prevent jam from melting.
  • Store in an airtight container for up to 1 week.
