  • 2 cups cooked chicken, shredded
  • 2 cups cooked rice
  • 2 cups fresh broccoli florets
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs
  • 1 tbsp butter, melted

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, mix together the shredded chicken, cooked rice, broccoli florets, cream of chicken soup, sour cream, milk, garlic powder, onion powder, salt, and pepper.
  • Stir in 3/4 cup of the shredded cheddar cheese.
  • Pour the mixture into a greased 9x13-inch baking dish.
  • Sprinkle the remaining cheese over the top.
  • In a small bowl, mix the breadcrumbs with melted butter, and sprinkle over the casserole.
  • Bake for 25-30 minutes, until the casserole is bubbly and the topping is golden.
  • Let cool for a few minutes before serving.

Notes

  • You can substitute frozen broccoli for fresh, but thaw and drain it first.
  • For added flavor, try mixing in cooked bacon or a sprinkle of paprika.
  • To make this dish even quicker, use rotisserie chicken.
