  • 1 lb boneless, skinless chicken thighs or breasts

  • 2 tbsp olive oil

  • 3 cloves garlic, minced

  • 1 lemon, juiced

  • 1 tsp dried oregano

  • 1 tsp paprika

  • Salt & pepper to taste

  • 2 cups cooked rice (white or brown)

  • 1 cup cucumber, diced

  • 1 cup cherry tomatoes, halved

  • 1/2 red onion, thinly sliced

  • 1/2 cup feta cheese, crumbled

  • 1/4 cup fresh parsley, chopped

  • Tzatziki sauce

Instructions

  1. Marinate Chicken: In a bowl, mix olive oil, garlic, lemon juice, oregano, paprika, salt, and pepper. Add chicken and marinate for at least 30 minutes.

  2. Cook Chicken: Grill or pan-cook the chicken over medium heat until fully cooked (internal temp 165°F). Rest and slice.

  3. Prepare Bowl: In serving bowls, layer rice, cucumber, tomatoes, onion, and sliced chicken.

  4. Top & Serve: Drizzle with tzatziki, sprinkle with feta and parsley. Serve immediately.
