  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 8 oz cremini mushrooms (sliced)
  • 3 cloves garlic (minced)
  • 1 cup marsala wine
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 12 oz pasta (fettuccine or penne)
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried thyme or Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the Pasta: Boil the pasta in salted water until al dente. Drain and set aside.
  2. Cook the Chicken: Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper, then cook until golden brown and fully cooked. Remove and set aside.
  3. Sauté Mushrooms: In the same skillet, melt butter. Add mushrooms and garlic, cooking until softened.
  4. Prepare the Sauce: Pour in marsala wine, scraping the bottom of the skillet. Add chicken broth, heavy cream, thyme, and Parmesan cheese. Simmer until the sauce thickens.
  5. Combine: Return chicken to the skillet and add the cooked pasta. Toss everything together until well coated.
