Ingredients

Scale
  • For the Chicken Meatballs:
    • 1 lb ground chicken (mix of breast and thighs for juiciness)
    • 1/2 cup breadcrumbs (panko or regular)
    • 1 large egg
    • 1/4 cup Parmesan cheese, grated (optional)
    • 3 cloves garlic, minced
    • 1 small onion, finely chopped or grated
    • 1/4 cup fresh parsley, chopped (or 1 tbsp dried parsley)
    • 1 tsp Italian seasoning
    • 1/2 tsp paprika (optional)
    • 1 tsp salt
    • 1/2 tsp black pepper
    • 2 tbsp olive oil (for frying or brushing if baking)
  • For Serving (Optional):
    • 2 cups marinara sauce, warmed
    • 8 oz pasta (spaghetti or your choice)
    • Grated Parmesan cheese (for garnish)
    • Fresh basil, chopped (for garnish)

Instructions

  • In a large bowl, mix the ground chicken, breadcrumbs, egg, Parmesan, garlic, onion, parsley, Italian seasoning, paprika, salt, and pepper until well combined.
  • Form the mixture into small meatballs, about 1.5 inches in diameter.
  • For Frying: Heat olive oil in a skillet over medium heat. Fry the meatballs, turning occasionally, until golden and cooked through, about 8-10 minutes.
  • For Baking: Preheat the oven to 400°F (200°C). Place meatballs on a parchment-lined baking sheet, brush with olive oil, and bake for 15-18 minutes until cooked through.
  • Serve with warmed marinara sauce and pasta, garnished with Parmesan cheese and fresh basil.

Notes

  • You can bake the meatballs for a healthier option.
  • Parmesan cheese adds extra flavor, but can be omitted for a dairy-free version.
  • Serve over spaghetti or enjoy in a sub roll for meatball sandwiches.
