  • 1 large onion, chopped

  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (6 oz) tomato paste
  • 1 cup beef broth
  • Salt and pepper to taste
  • Optional toppings: sour cream, shredded cheese, chopped cilantro

Instructions

  • In a large pot, cook the ground beef over medium heat until browned. Drain excess fat.
  • Add the chopped onion, garlic, and red bell pepper. Cook until the vegetables are softened.
  • Stir in the chili powder, cumin, paprika, and oregano. Cook for 1-2 minutes until fragrant.
  • Add the diced tomatoes, kidney beans, tomato paste, and beef broth. Stir well to combine.
  • Bring the mixture to a boil, then reduce the heat and simmer for 30-40 minutes, stirring occasionally.
  • Season with salt and pepper to taste. Serve hot with your choice of toppings.
