These delightful Churros Poppers are crispy on the outside, soft inside, and infused with vanilla flavor. Fried to golden perfection, they make a delicious dessert or snack.

  • 1 cup water
  • 1/2 cup unsalted butter (1 stick)
  • 1 tbsp granulated sugar
  • 1/4 tsp salt
  • 1 cup all-purpose flour
  • 2 large eggs (room temperature)
  • 1 tsp vanilla extract

For Frying:

  • Vegetable oil (enough to fill the pot 2-3 inches deep)

Instructions

  1. Make the Dough:
    In a saucepan, combine water, butter, sugar, and salt. Bring to a boil. Reduce heat and stir in flour until a dough forms and pulls away from the sides. Remove from heat.
  2. Add Eggs:
    Let the dough cool slightly, then mix in eggs one at a time until fully incorporated. Add vanilla extract and mix until smooth.
  3. Heat Oil:
    Heat oil in a deep pot to 350°F, ensuring it’s deep enough for frying.
  4. Fry the Poppers:
    Using a spoon or piping bag, drop small portions of dough into the hot oil. Fry until golden brown, about 2-3 minutes per batch. Remove and drain on paper towels.
  5. Serve:
    Roll the churro poppers in cinnamon sugar or serve with your favorite dipping sauces.
