  • 2 lbs beef chuck, cut into 2-inch cubes
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 4 slices of bacon, chopped
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 garlic cloves, minced
  • 2 tbsp tomato paste
  • 2 cups red wine
  • 2 cups beef stock
  • 1 bay leaf
  • 1 tsp thyme
  • 8 oz mushrooms, sliced
  • 12 pearl onions, peeled
  • 2 tbsp butter
  • 2 tbsp all-purpose flour

Instructions

  1. Season beef with salt and pepper.
  2. Heat olive oil in a large Dutch oven, then brown the beef in batches. Set aside.
  3. Cook bacon until crispy, then add onion, carrots, and garlic. Sauté for 5 minutes.
  4. Stir in tomato paste, then pour in red wine. Simmer for 5 minutes.
  5. Add beef stock, bay leaf, thyme, and browned beef. Cover and simmer for 1.5–2 hours.
  6. In a skillet, sauté mushrooms and pearl onions in butter until golden. Add to the pot.
  7. Mix flour with a bit of broth to make a slurry, then stir it into the stew. Simmer until thickened.
  8. Remove bay leaf and serve hot over mashed potatoes or crusty bread.

  • Use a dry red wine like Burgundy or Pinot Noir for authentic flavor.
  • The dish tastes even better the next day after the flavors meld.
