lb ground beef
1 large onion, thinly sliced
8 slices rye bread
4 slices Swiss cheese
4 slices cheddar cheese
4 tbsp unsalted butter
Salt and pepper to taste
Instructions
Form the ground beef into 4 equal patties and season with salt and pepper.
Cook the patties in a skillet over medium heat until browned and cooked through, about 4-5 minutes per side.
In the same skillet, melt 2 tbsp butter and sauté onions until golden and caramelized, about 10 minutes. Remove and set aside.
Butter one side of each slice of rye bread.
Layer a slice of cheddar, a beef patty, caramelized onions, a slice of Swiss cheese, and top with another slice of bread, buttered side out.
Grill each sandwich in the skillet over medium heat until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.

Notes
