  • 1 ½ lbs boneless chicken thighs or breasts, cubed

  • 1 tbsp oil (coconut or vegetable)

  • 1 onion, chopped

  • 3 cloves garlic, minced

  • 1 tbsp ginger, grated

  • 2 tbsp curry powder

  • 1 tsp turmeric

  • 1 tsp paprika

  • ½ tsp chili flakes (optional)

  • 1 can (14 oz) coconut milk

  • 1 tbsp tomato paste

  • 1 tbsp fish sauce or soy sauce

  • Salt and pepper to taste

  • Fresh cilantro, for garnish

Instructions

  1. Heat oil in a skillet over medium heat. Add onions, garlic, and ginger. Sauté until fragrant.

  2. Add curry powder, turmeric, paprika, and chili flakes. Cook for 1–2 minutes.

  3. Stir in the chicken and season with salt and pepper. Brown the chicken for 5–6 minutes.

  4. Add tomato paste, coconut milk, and fish sauce. Mix well and bring to a simmer.

  5. Cover and cook on low heat for 15–20 minutes or until the chicken is tender.

  6. Garnish with fresh cilantro and serve hot over rice or naan.
