This Crack Chicken Casserole recipe combines shredded chicken, creamy ranch, crispy bacon, and gooey cheese baked to perfection.

Ingredients

  • 2 cups shredded cooked chicken
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 packet ranch seasoning mix
  • 2 cups shredded cheddar cheese
  • 1 cup cooked and crumbled bacon
  • 1/2 cup chopped green onions
  • 1/2 cup milk
  • 1 lb cooked pasta (penne or rotini recommended)
  • Salt and pepper to taste

Instructions

  • Preheat oven to 375°F (190°C). Grease a 9x13-inch casserole dish.
  • In a large mixing bowl, combine cream cheese, sour cream, milk, and ranch seasoning. Mix until smooth.
  • Fold in the shredded chicken, 1 cup of cheddar cheese, bacon (reserve some for topping), and green onions.
  • Add cooked pasta to the mixture and stir until evenly coated. Season with salt and pepper if needed.
  • Transfer the mixture to the prepared casserole dish. Sprinkle the remaining cheddar cheese and reserved bacon on top.
  • Bake for 25-30 minutes, or until bubbly and golden on top.
  • Let cool slightly, garnish with more green onions if desired, and serve warm

  • Substitute gluten-free pasta for a gluten-free version.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
