Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1/4 cup brandy or white wine
  • 1 tablespoon Dijon mustard
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon fresh parsley, chopped (for garnish)
  • Salt and pepper to taste

Instructions

  • Season the chicken breasts with salt and pepper.
  • Heat olive oil and butter in a large skillet over medium heat. Cook the chicken for 5-6 minutes per side until golden brown and cooked through. Remove and set aside.
  • In the same skillet, sauté the onions and garlic until softened, about 3 minutes.
  • Add brandy (or wine) to the skillet to deglaze, scraping up any brown bits. Let it simmer for 2 minutes until slightly reduced.
  • Stir in the mustard, chicken broth, and Worcestershire sauce, and bring to a simmer.
  • Add the heavy cream, stirring until the sauce thickens slightly, about 3-4 minutes.
  • Return the chicken to the skillet and coat with the sauce. Simmer for 5 more minutes.
  • Garnish with fresh parsley and serve hot with your favorite sides.

Notes

  • Substitute white wine for brandy if desired.
  • Serve with mashed potatoes, rice, or steamed vegetables for a hearty meal.
  • Add mushrooms or spinach for extra flavor and texture.
