  • 8 oz pasta (spaghetti, linguine, or fettuccine)
  • 1 lb shrimp, peeled and deveined
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • Zest of 1 lemon
  • 2 tbsp lemon juice
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Cook pasta according to package instructions. Drain and set aside.
  • In a large skillet, heat olive oil and butter over medium heat. Add shrimp, season with salt and pepper, and cook for 2-3 minutes per side until pink and opaque. Remove shrimp from the skillet and set aside.
  • In the same skillet, add garlic and sauté for about 1 minute until fragrant.
  • Pour in heavy cream, lemon zest, and lemon juice. Stir and bring the sauce to a simmer.
  • Gradually stir in Parmesan cheese until melted and the sauce is smooth.
  • Return the shrimp to the skillet, toss to coat in the sauce.
  • Add the cooked pasta to the skillet and toss everything together.
  • Serve immediately, garnished with fresh parsley and extra lemon zest, if desired.
