This Creamy Ricotta Chicken Pasta is a comforting and flavorful dish featuring juicy chicken, creamy ricotta, and perfectly cooked pasta. With a blend of garlic, herbs, and parmesan, this dish is perfect for a quick weeknight dinner or a special occasion.

Ingredients

  • 12 oz pasta (penne, fettuccine, or your choice)
  • 2 cups cooked chicken, shredded or cubed
  • 1 cup ricotta cheese
  • ½ cup parmesan cheese, grated
  • 1 cup milk or heavy cream
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ tsp red pepper flakes (optional)
  • ½ cup pasta water (reserved)
  • Fresh basil or parsley for garnish

Instructions

  • Cook pasta according to package instructions. Reserve ½ cup of pasta water before draining.
  • In a large pan, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  • Add cooked chicken, Italian seasoning, salt, black pepper, and red pepper flakes. Stir and cook for 2 minutes.
  • Lower the heat and add ricotta cheese, parmesan, and milk. Stir until the mixture is smooth.
  • Add the cooked pasta to the sauce, tossing to coat. If needed, add reserved pasta water to adjust consistency.
  • Let simmer for 2 minutes, then remove from heat. Garnish with fresh basil or parsley.
  • Serve warm and enjoy!

Notes

  • For extra creaminess, use heavy cream instead of milk.
  • Add spinach or sun-dried tomatoes for more flavor.
  • Use grilled or rotisserie chicken for convenience.
