This Crispy Chicken with Creamy Pasta recipe combines golden, crunchy chicken with a luscious, flavorful pasta sauce. A satisfying and easy meal!
For the Chicken:
2 boneless, skinless chicken breasts
1 cup breadcrumbs
½ cup grated Parmesan cheese
1 tsp garlic powder
1 tsp paprika
1 egg
2 tbsp milk
Salt and pepper to taste
2 tbsp olive oil
For the Creamy Pasta:
8 oz pasta (penne, fettuccine, or spaghetti)
1 tbsp butter
2 cloves garlic, minced
1 cup heavy cream
½ cup grated Parmesan cheese
½ tsp Italian seasoning
Salt and pepper to taste
½ cup pasta water (as needed)
Fresh parsley for garnish
Prepare the Chicken:
Pound the chicken breasts to an even thickness.
In a bowl, whisk the egg and milk.
In another bowl, mix breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper.
Dip chicken into the egg mixture, then coat with the breadcrumb mixture.
Heat olive oil in a pan over medium heat and cook chicken for 4-5 minutes per side until golden and crispy. Remove and set aside.
Cook the Pasta:
Boil pasta according to package instructions. Reserve ½ cup of pasta water and drain.
Make the Creamy Sauce:
In the same pan, melt butter and sauté garlic until fragrant.
Add heavy cream, Parmesan cheese, Italian seasoning, salt, and pepper. Stir until smooth.
Mix in cooked pasta, adding reserved pasta water if needed to loosen the sauce.
Serve:
Slice crispy chicken and place over creamy pasta.
Garnish with fresh parsley and extra Parmesan.
