  • 1 lb salmon fillet, skinless and cut into bite-sized pieces
  • ½ cup all-purpose flour
  • ½ cup cornstarch
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp cayenne pepper (adjust to taste)
  • 1 egg
  • ¼ cup milk
  • 1 cup panko breadcrumbs
  • Oil for frying
  • Optional: chopped parsley and lemon wedges for garnish

Instructions

  • In a bowl, mix flour, cornstarch, salt, black pepper, garlic powder, smoked paprika, and cayenne pepper.
  • In another bowl, whisk together the egg and milk.
  • Dip each salmon piece into the flour mixture, then the egg wash, and finally coat with panko breadcrumbs.
  • Heat oil in a frying pan over medium-high heat.
  • Fry salmon bites in batches until golden brown and crispy, about 2-3 minutes per side.
  • Remove and drain on a paper towel.
  • Garnish with parsley and serve with lemon wedges or your favorite dipping sauce.

Notes

  • For extra crispiness, double-coat the salmon by repeating the egg and breadcrumb steps.
  • Air fry at 400°F (200°C) for 8-10 minutes as a healthier alternative.
