  • 1 lb beef sirloin or tenderloin, thinly sliced
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 cups mushrooms, sliced
  • 2 garlic cloves, minced
  • 1 tbsp all-purpose flour
  • 1 cup beef broth
  • 1 cup sour cream
  • 1 tsp Dijon mustard
  • Salt and pepper to taste
  • 12 oz egg noodles, cooked
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add the beef slices, season with salt and pepper, and sear until browned. Remove and set aside.
  2. In the same skillet, sauté onions and mushrooms until softened. Add garlic and cook for 1 minute.
  3. Stir in the flour, cooking for 1 minute. Gradually pour in the beef broth, whisking to prevent lumps.
  4. Simmer the sauce for 3–4 minutes, then stir in sour cream and Dijon mustard. Season with additional salt and pepper if needed.
  5. Return the cooked beef to the skillet and let it warm through.
  6. Serve the stroganoff over cooked egg noodles, garnished with fresh parsley.

Notes

  • For extra flavor, add a splash of Worcestershire sauce or white wine to the sauce.
  • Substitute Greek yogurt for sour cream for a lighter version.
  • Best served immediately, but leftovers can be refrigerated for up to 3 days.
