This easy Mexican casserole recipe combines ground beef, beans, cheese, and tortillas in a deliciously layered dish that's perfect for busy weeknights.   • 1 lb ground beef
  • 1 small onion, diced
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes with green chilies (Rotel)
  • 1 packet taco seasoning
  • 2 cups shredded cheddar or Mexican blend cheese
  • 1 cup sour cream
  • 8 small flour tortillas (or corn tortillas)
  • 1 can enchilada sauce (red or green)
  • 1/4 cup sliced black olives (optional)
  • Fresh cilantro for garnish

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a large skillet, cook the ground beef and diced onion over medium heat until the beef is browned, about 5-7 minutes. Drain any excess fat.
  • Stir in the taco seasoning, black beans, and diced tomatoes with green chilies. Let simmer for 2-3 minutes.
  • In a greased 9x13-inch baking dish, spread a thin layer of enchilada sauce.
  • Layer 4 tortillas on the bottom, overlapping slightly if needed. Spread half of the beef mixture over the tortillas, then sprinkle with 1 cup of cheese.
  • Repeat with another layer of tortillas, beef mixture, and cheese. Pour the remaining enchilada sauce over the top.
  • Bake for 25-30 minutes, until the casserole is bubbling and the cheese is melted and golden.
  • Let cool for a few minutes, then garnish with sour cream, black olives, and fresh cilantro. Serve hot.

  • For a vegetarian version, omit the beef and add extra beans or veggies like bell peppers and corn.
