  • 1 lb ground beef
  • 1 packet (1 oz) taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 can (8 oz) tomato sauce
  • 2 cups Fritos corn chips
  • 2 cups shredded cheddar cheese
  • Optional toppings: sour cream, guacamole, diced tomatoes, green onions

Instructions

  • Preheat oven to 350°F (175°C).
  • In a large skillet, brown the ground beef over medium heat. Drain excess fat.
  • Stir in taco seasoning, diced tomatoes, black beans, and tomato sauce. Simmer for 5 minutes.
  • In a 9x13-inch baking dish, spread half the Fritos across the bottom.
  • Pour the beef mixture over the Fritos, then sprinkle with shredded cheddar cheese.
  • Add the remaining Fritos on top and bake for 15 minutes, until cheese is melted and bubbly.
  • Serve hot with your favorite toppings like sour cream or guacamole.
