This Egg Roll Stir Fry is a low-carb, one-pan meal loaded with ground meat, cabbage, and carrots, bursting with classic egg roll flavors.

  • 1 lb ground pork (or chicken, turkey, or beef)
  • 1 tbsp sesame oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 4 cups coleslaw mix (shredded cabbage & carrots)
  • 2 tbsp soy sauce (or coconut aminos for gluten-free)
  • 1 tsp rice vinegar
  • 1/2 tsp crushed red pepper flakes (optional)
  • 2 green onions, sliced
  • 1 tbsp sesame seeds (optional)

Instructions

  • Heat sesame oil in a large skillet over medium heat.
  • Add ground pork and cook until browned, breaking it up as it cooks.
  • Add onion, garlic, and ginger, sautéing until fragrant.
  • Stir in coleslaw mix, soy sauce, rice vinegar, and red pepper flakes. Cook for 3–5 minutes until cabbage softens.
  • Garnish with green onions and sesame seeds before serving.

Notes

  • Swap meat for tofu for a vegetarian version.
  • Use tamari or coconut aminos for a gluten-free option.
