  • 1 cup sour cream
  • 1 packet taco seasoning
  • 1 tsp cumin
  • 1 1/2 cups shredded Mexican cheese blend
  • 1/4 cup fresh cilantro, chopped (optional)
  • Salt and pepper to taste
  • Tortilla chips (optional, for topping)

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a large bowl, combine the shredded chicken, cooked rice, black beans, corn, diced tomatoes with green chilies, sour cream, taco seasoning, cumin, salt, and pepper. Mix until well combined.
  • Transfer the mixture to a greased 9x13-inch baking dish, spreading it out evenly.
  • Top with the shredded Mexican cheese blend.
  • Bake for 20-25 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and let the casserole rest for a few minutes before serving.
