These flaky apple pie bars are packed with spiced apple filling and a buttery, flaky crust. A perfect dessert for fall, holidays, or anytime!

  • 2 ½ cups all-purpose flour
  • 1 cup unsalted butter, cold and cubed
  • ½ cup granulated sugar
  • ¼ cup ice water
  • 4 cups apples, peeled and sliced
  • ½ cup brown sugar
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • 1 tbsp cornstarch
  • 1 tsp vanilla extract
  • 1 egg (for egg wash)

Instructions

  • Preheat oven to 375°F (190°C) and line a baking pan with parchment paper.
  • In a bowl, mix flour and sugar, then cut in butter until crumbly. Add ice water gradually to form a dough. Chill for 30 minutes.
  • Roll out half of the dough and press it into the baking pan.
  • In a separate bowl, mix apples, brown sugar, cinnamon, nutmeg, cornstarch, and vanilla.
  • Spread the apple mixture evenly over the crust.
  • Roll out the remaining dough and place it over the apples. Seal edges and brush with egg wash.
  • Bake for 40–45 minutes until golden brown.
  • Cool before slicing into bars.

Notes

  • Use a mix of tart and sweet apples for the best flavor.
  • Store leftovers in an airtight container for up to 3 days.
