  • 1 lb chicken breasts, diced
  • 10 oz pasta (penne or rotini)
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 2 cups heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp chopped parsley (optional, for garnish)

Instructions

  • Preheat oven to 375°F (190°C).
  • Cook pasta according to package instructions, drain, and set aside.
  • In a skillet, melt butter over medium heat. Add diced chicken, season with salt and pepper, and cook until browned and cooked through. Remove chicken from the skillet and set aside.
  • In the same skillet, sauté garlic until fragrant. Add heavy cream, chicken broth, and Italian seasoning. Simmer for 5 minutes, stirring occasionally.
  • Stir in Parmesan cheese and continue cooking until the sauce thickens.
  • Add cooked pasta and chicken to the sauce, stirring to combine.
  • Transfer the mixture to a greased 9x13 baking dish. Sprinkle mozzarella cheese evenly over the top.
  • Bake for 20-25 minutes until the cheese is bubbly and golden.
  • Garnish with chopped parsley and serve warm.
