  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 tbsp ground ginger
  • 1 tbsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/4 tsp nutmeg
  • 3/4 cup (1.5 sticks) unsalted butter, softened
  • 3/4 cup packed brown sugar
  • 1/2 cup molasses
  • 1 large egg
  • 1 tsp vanilla extract

Instructions

  • In a medium bowl, whisk together flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg.
  • In a large bowl, beat the butter and brown sugar until fluffy. Add molasses, egg, and vanilla and beat until combined.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined. Wrap dough in plastic wrap and refrigerate for 1 hour.
  • Preheat oven to 350°F (175°C). Roll dough to 1/4-inch thickness and cut into shapes with cookie cutters.
  • Place on lined baking sheets and bake for 8-10 minutes or until edges are set.
  • Cool on wire racks and decorate as desired.
