  • 1 lb chicken breast, cut into chunks

  • 1 cup coconut milk

  • 2 tbsp soy sauce

  • 1 tbsp fish sauce

  • 1 tbsp brown sugar

  • 1 tbsp lime juice

  • 2 garlic cloves, minced

  • 1 tsp fresh ginger, grated

  • 1 tsp red curry paste

  • 1/4 cup cilantro, chopped

  • Salt and pepper to taste

  • Wooden or metal skewers

Instructions

  1. In a bowl, whisk together coconut milk, soy sauce, fish sauce, brown sugar, lime juice, garlic, ginger, and red curry paste.

  2. Season with salt and pepper to taste.

  3. Add chicken chunks to the marinade and toss to coat. Let it marinate in the fridge for at least 30 minutes, or up to 4 hours.

  4. Preheat grill to medium-high heat.

  5. Thread the marinated chicken pieces onto skewers.

  6. Grill chicken for 5-7 minutes per side, until cooked through and slightly charred.

  7. Garnish with chopped cilantro before serving.

Notes

  • For extra flavor, soak wooden skewers in water for 30 minutes before grilling to prevent burning.
