  • 4-5 medium potatoes (diced)
  • 1 medium onion (finely chopped)
  • 2-3 cloves garlic (minced)
  • 1-2 bell peppers (diced)
  • 2 medium carrots (diced, optional)
  • 2 tbsp olive oil
  • 1 tsp salt (or to taste)
  • ½ tsp black pepper (or to taste)
  • 1 tsp paprika
  • ½ tsp cumin
  • 1 tsp Italian seasoning
  • 1 cup shredded cheddar cheese (optional)
  • Handful of fresh parsley (chopped for garnish)
  • ¼ cup broth or water

Instructions

  • Cook the potatoes: Heat olive oil in a large skillet over medium heat. Add diced potatoes and cook until golden and crispy, about 10-12 minutes. Remove and set aside.
  • Cook the beef and vegetables: In the same skillet, sauté onions, garlic, and bell peppers until softened. Add ground beef and cook until browned.
  • Combine and season: Add the cooked potatoes back to the skillet. Stir in salt, pepper, paprika, cumin, and Italian seasoning. Add broth or water to help soften the potatoes further, if needed.
  • Cheese and garnish: If using, sprinkle shredded cheddar cheese over the top and let it melt. Garnish with chopped parsley before serving.
