  • 1 lb ground sausage (Italian or breakfast sausage)
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 tsp paprika
  • 1/2 tsp oregano
  • Salt and pepper to taste
  • 1/2 cup shredded cheese (optional)
  • Fresh parsley for garnish (optional)

Instructions

  • In a large skillet, cook ground sausage over medium heat until browned, breaking it apart as it cooks. Drain any excess fat.
  • Add the diced onion, bell pepper, and garlic to the skillet, cooking for 4-5 minutes until softened.
  • Stir in the rice, chicken broth, diced tomatoes, paprika, oregano, salt, and pepper.
  • Bring the mixture to a boil, then reduce heat to low and cover. Let it simmer for 18-20 minutes, or until the rice is fully cooked and liquid is absorbed.
  • Remove from heat, stir in shredded cheese if using, and garnish with fresh parsley.
  • Serve hot, and enjoy!

Notes

You can substitute ground sausage with ground turkey or chicken for a lighter version. Feel free to add extra vegetables like zucchini or mushrooms for a heartier meal. For added spice, use hot Italian sausage or sprinkle in some red pepper flakes.
