This Healthy Chicken and Broccoli Stir Fry is a delicious, easy-to-make dish featuring tender chicken, crisp broccoli, and a flavorful sauce. It's a perfect quick dinner that's low in calories and high in protein, making it a great choice for a balanced diet.

Ingredients

  • 2 boneless, skinless chicken breasts, sliced
  • 3 cups broccoli florets
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1-inch ginger, grated
  • ¼ cup low-sodium soy sauce
  • 1 tbsp honey or maple syrup
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tbsp cornstarch mixed with 2 tbsp water (slurry)
  • ½ tsp red pepper flakes (optional)
  • 2 tbsp sesame seeds (for garnish)

 

  • 2 green onions, chopped

Instructions

  • Heat 1 tbsp olive oil in a pan over medium-high heat. Add chicken slices and cook until browned and fully cooked. Remove and set aside.
  • In the same pan, add the remaining oil, garlic, and ginger. Sauté for 30 seconds.
  • Add broccoli and cook for 2-3 minutes until slightly tender.
  • In a small bowl, mix soy sauce, honey, rice vinegar, sesame oil, and cornstarch slurry. Pour into the pan.
  • Return the chicken to the pan and stir everything together until the sauce thickens.

 

  • Sprinkle with sesame seeds and green onions before serving.

Notes

  • Serve with brown rice, quinoa, or cauliflower rice for a complete meal.
  • Adjust spice level by adding more red pepper flakes.

 

  • Use tamari or coconut aminos for a gluten-free version.
