  • 1 lb boneless, skinless chicken breasts
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 can (4 oz) diced green chilies
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 1/4 cup plain Greek yogurt (optional, for topping)
  • Fresh cilantro (optional, for garnish)

Instructions

 

  1. Heat olive oil in a large pot over medium heat. Add diced onion and cook until soft, about 5 minutes.
  2. Add minced garlic and cook for another minute until fragrant.
  3. Add the chicken breasts to the pot, cooking until they are browned on both sides, about 5-7 minutes per side.
  4. Pour in the chicken broth, green chilies, cumin, chili powder, oregano, and salt and pepper. Bring to a boil.
  5. Reduce the heat and let simmer for 20 minutes, or until the chicken is fully cooked.
  6. Remove the chicken breasts from the pot, shred them with two forks, and return the shredded chicken to the pot.
  7. Add the white beans and corn, stir well, and cook for another 5-10 minutes until heated through.
  8. Serve hot, topped with Greek yogurt and fresh cilantro if desired.

Notes

  • For a spicier chili, add a chopped jalapeño or extra chili powder.
  • You can substitute the chicken breasts with chicken thighs for a richer flavor.
  • This chili can be made ahead and stored in the refrigerator for up to 3 days or frozen for up to 3 months.
