  • 1 cup sugar
  • 1/2 cup rice vinegar
  • 2 tablespoons sambal oelek or red chili flakes
  • 4 cloves garlic, minced
  • 1 tablespoon cornstarch
  • 2 tablespoons water (for cornstarch slurry)
  • 1 tablespoon fish sauce (optional)
  • 1/2 teaspoon salt

Instructions

  • Combine water, sugar, rice vinegar, sambal oelek, garlic, fish sauce (if using), and salt in a saucepan.
  • Bring to a boil over medium heat, stirring until the sugar dissolves.
  • In a small bowl, mix cornstarch and water to create a slurry.
  • Slowly add the slurry to the saucepan, stirring constantly to thicken.
  • Reduce heat and simmer for 5 minutes until the sauce thickens.
  • Remove from heat and let it cool. Transfer to a jar and refrigerate.
