  • 1 medium onion, diced
  • 1 (1-ounce) packet taco seasoning mix
  • 1/2 cup water
  • 1 (10-ounce) can diced tomatoes with green chilies, drained
  • 1 (4-ounce) can diced jalapeños, drained (optional)
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 2 cups shredded cheddar cheese (divided)
  • 1 large tomato, sliced thin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1 (8-ounce) can refrigerated crescent roll dough or biscuit dough

Instructions

  • Preheat oven to 350°F (175°C).
  • Cook the ground beef and diced onion in a skillet over medium heat until browned, then drain.
  • Stir in taco seasoning and 1/2 cup of water. Cook until the mixture thickens.
  • Press crescent roll dough into the bottom of a baking dish, forming a crust. Bake for 5 minutes to set.
  • Spread the beef mixture over the crust.
  • In a separate bowl, combine sour cream, mayonnaise, 1 cup of cheddar cheese, garlic powder, onion powder, smoked paprika, salt, and pepper. Spread this mixture over the beef.
  • Top with diced tomatoes, jalapeños (optional), and remaining cheddar cheese.
  • Bake for 25-30 minutes or until bubbly and golden.
  • Let the casserole cool slightly before slicing and serving.

Notes

  • Adjust the jalapeños according to your heat preference.
  • Crescent roll dough can be substituted with biscuit dough for a fluffier texture.
  • This casserole can be made ahead and refrigerated before baking.
