    • 1 pound ground beef or Italian sausage
    • 1 small onion, diced
    • 3 cloves garlic, minced
    • 24 oz marinara sauce
    • 1 can (15 oz) crushed tomatoes
    • 1 teaspoon dried oregano
    • 1 teaspoon dried basil
    • Salt and pepper, to taste
    • 1/2 teaspoon red pepper flakes (optional)
  • For the Cheese Mixture:
    • 2 cups ricotta cheese
    • 1 cup shredded mozzarella cheese
    • 1/2 cup grated Parmesan cheese
    • 1 egg
    • 1 tablespoon fresh parsley, chopped
  • For the Casserole:
    • 12 oz wide egg noodles or rotini pasta
    • 2 cups shredded mozzarella cheese (for topping)
    • 1/4 cup grated Parmesan cheese (for topping)
    • Fresh basil or parsley, chopped (for garnish)

Instructions

  • Preheat oven to 375°F (190°C). Cook noodles according to package directions and drain.
  • In a large skillet, cook the ground beef or sausage with onions until browned. Add garlic and cook for 1 minute. Stir in marinara, crushed tomatoes, oregano, basil, salt, pepper, and red pepper flakes. Simmer for 10 minutes.
  • In a bowl, mix ricotta, 1 cup mozzarella, Parmesan, egg, and parsley.
  • Combine cooked noodles with meat sauce. Layer in a casserole dish: half the noodle mixture, cheese mixture, then the remaining noodles. Top with remaining mozzarella and Parmesan.
  • Bake for 25-30 minutes until cheese is bubbly and golden. Garnish with fresh basil or parsley.

Notes

 

For a spicier flavor, increase the red pepper flakes. You can also substitute ground turkey for a leaner option.
