This lazy chicken Parmesan grilled cheese recipe combines the classic flavors of chicken Parmesan—crispy chicken, marinara sauce, and gooey melted mozzarella—into an easy-to-make grilled cheese sandwich.   • 2 cups cooked chicken (shredded or diced)
  • 1 cup marinara sauce
  • 1 ½ cups shredded mozzarella cheese
  • 4 slices provolone cheese
  • 8 slices of bread (Italian or sourdough works best)
  • 4 tbsp butter (softened)
  • 1 tsp garlic powder
  • 1 tbsp Parmesan cheese (grated)
  • Fresh basil for garnish (optional)

Instructions

  1. In a skillet, heat the marinara sauce and add the shredded chicken. Stir until the chicken is fully coated and heated through.
  2. Spread softened butter on one side of each bread slice. Sprinkle a little garlic powder and grated Parmesan cheese on top of the butter for extra flavor.
  3. Assemble the sandwiches by placing a slice of provolone cheese on the unbuttered side of the bread, followed by a scoop of the marinara-coated chicken, some shredded mozzarella, and another slice of provolone cheese. Top with the second slice of bread (butter side facing out).
  4. Heat a skillet or griddle over medium heat. Grill the sandwiches for 3-4 minutes per side, or until the bread is golden brown and the cheese is melted.
  5. Garnish with fresh basil if desired, slice, and serve hot.

Notes

  • You can use leftover rotisserie chicken or frozen chicken tenders for convenience.
  • Add a sprinkle of red pepper flakes for a bit of heat.
  • Serve with extra marinara sauce on the side for dipping.
