    • 3 tbsp olive oil (divided)

    • 1/2 cup chicken broth (optional, for sauce)
    • 2 tbsp butter
    • 1/4 cup fresh parsley, chopped (for garnish)
    • 1 tsp fresh thyme, chopped (or 1/2 tsp dried thyme)
    • 1/2 tsp red pepper flakes (optional)
    • Salt and pepper, to taste
  • For the Marinade (Optional):
    • 2 tbsp olive oil
    • 3 cloves garlic, minced
    • 1/4 cup lemon juice
    • 1 tsp thyme
    • Salt and pepper, to taste

Instructions

  • Optional Marinade: Combine olive oil, garlic, lemon juice, thyme, salt, and pepper in a bowl. Marinate the chicken for 30 minutes to 1 hour.
  • Heat 2 tbsp of olive oil in a skillet over medium heat. Season the chicken with salt and pepper, then sear for 4-5 minutes on each side until golden and cooked through. Remove from skillet and set aside.
  • In the same skillet, add 1 tbsp olive oil and minced garlic. Sauté until fragrant.
  • Add lemon juice, lemon zest, and chicken broth. Bring to a simmer, scraping up any browned bits from the pan.
  • Stir in butter, thyme, and red pepper flakes. Let the sauce simmer for a few minutes until slightly thickened.
  • Return the chicken to the skillet, spooning the sauce over the top. Cook for another 2-3 minutes to combine flavors.
  • Garnish with fresh parsley and serve.

  • Marinating the chicken is optional but enhances the flavor.
  • You can skip the chicken broth for a more concentrated lemon-garlic flavor.
