Loaded Chicken and Potato Casserole recipe combines tender chicken, crispy potatoes, cheese, and bacon for a hearty, flavorful meal. Perfect comfort food for dinner!

  • 2 lbs potatoes, diced
  • 1.5 lbs boneless, skinless chicken breasts, cubed
  • 2 cups shredded cheddar cheese
  • 1/2 cup cooked bacon bits
  • 1/4 cup green onions, chopped
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp onion powder
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  • Preheat oven to 400°F (200°C). Grease a 9x13 casserole dish.
  • Toss diced potatoes with olive oil, garlic powder, paprika, onion powder, salt, and pepper. Spread in the dish and bake for 25 minutes.
  • Add the cubed chicken on top of the potatoes, sprinkle with more seasoning, and bake for another 20 minutes.
  • Remove the dish, top with cheese, bacon bits, and green onions. Bake for an additional 5-7 minutes until cheese is melted.
  • Serve hot and enjoy!

Notes
