2 lbs potatoes, diced
1.5 lbs boneless, skinless chicken breasts, cubed
2 cups shredded cheddar cheese
1/2 cup cooked bacon bits
1/4 cup green onions, chopped
1 tsp garlic powder
1 tsp paprika
1/2 tsp onion powder
2 tbsp olive oil
Salt and pepper to taste
Instructions
Preheat oven to 400°F (200°C). Grease a 9x13 casserole dish.
Toss diced potatoes with olive oil, garlic powder, paprika, onion powder, salt, and pepper. Spread in the dish and bake for 25 minutes.
Add the cubed chicken on top of the potatoes, sprinkle with more seasoning, and bake for another 20 minutes.
Remove the dish, top with cheese, bacon bits, and green onions. Bake for an additional 5-7 minutes until cheese is melted.
Serve hot and enjoy!
Notes
For extra flavor, marinate chicken in your favorite seasoning beforehand.
Substitute cheddar with Monterey Jack or mozzarella for a different cheese flavor.
