1 ½ pounds lean ground beef or turkey
½ cup finely chopped white onion
1 tablespoon minced garlic
1 cup seasoned bread crumbs
1 tablespoon Worcestershire sauce
1 large egg, lightly beaten
⅓ cup cottage cheese
½ cup BBQ sauce
2 pounds potatoes, peeled and diced
½ cup unsalted butter
½ cup sour cream
½ cup warm milk or half-and-half
1 teaspoon kosher salt
1 teaspoon ground black pepper
6 slices thick bacon, cooked and crumbled
1 ½ cups shredded cheddar cheese
Instructions
Preheat oven to 375°F (190°C).
In a large bowl, combine ground beef, onion, garlic, bread crumbs, Worcestershire sauce, egg, cottage cheese, and BBQ sauce. Mix well.
Press the meat mixture into a greased baking dish. Bake for 20-25 minutes.
While meatloaf bakes, cook potatoes in boiling water until tender. Drain and mash with butter, sour cream, milk, salt, and pepper.
Spread mashed potatoes over the partially baked meatloaf. Top with crumbled bacon and cheddar cheese.
Bake for another 20-25 minutes until cheese is melted and bubbly.
Let cool slightly before serving.
