  • 1 ½ pounds lean ground beef or turkey
  • ½ cup finely chopped white onion
  • 1 tablespoon minced garlic
  • 1 cup seasoned bread crumbs
  • 1 tablespoon Worcestershire sauce
  • 1 large egg, lightly beaten
  • ⅓ cup cottage cheese
  • ½ cup BBQ sauce
  • 2 pounds potatoes, peeled and diced
  • ½ cup unsalted butter
  • ½ cup sour cream
  • ½ cup warm milk or half-and-half
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper
  • 6 slices thick bacon, cooked and crumbled
  • 1 ½ cups shredded cheddar cheese

Instructions

  • Preheat oven to 375°F (190°C).
  • In a large bowl, combine ground beef, onion, garlic, bread crumbs, Worcestershire sauce, egg, cottage cheese, and BBQ sauce. Mix well.
  • Press the meat mixture into a greased baking dish. Bake for 20-25 minutes.
  • While meatloaf bakes, cook potatoes in boiling water until tender. Drain and mash with butter, sour cream, milk, salt, and pepper.
  • Spread mashed potatoes over the partially baked meatloaf. Top with crumbled bacon and cheddar cheese.
  • Bake for another 20-25 minutes until cheese is melted and bubbly.
  • Let cool slightly before serving.
