12 oz linguine or spaghetti
1 lb large shrimp, peeled and deveined
2 tbsp olive oil
4 garlic cloves, minced
1 cup heavy cream
1/2 cup grated parmesan cheese
1/3 cup sun-dried tomatoes, chopped
1 tsp Italian seasoning
1/4 tsp red pepper flakes (optional)
Salt and pepper to taste
Fresh parsley for garnish
Instructions
Cook pasta according to package instructions. Reserve 1/2 cup of pasta water, then drain and set aside.
Heat olive oil in a large skillet over medium heat. Add shrimp, season with salt and pepper, and cook until pink (about 2-3 minutes per side). Remove and set aside.
In the same skillet, sauté minced garlic until fragrant. Add heavy cream, parmesan cheese, sun-dried tomatoes, Italian seasoning, and red pepper flakes. Stir until combined and simmer for 3-4 minutes.
Return shrimp to the skillet, then add cooked pasta. Toss to combine, adding reserved pasta water as needed to achieve desired sauce consistency.
Garnish with fresh parsley and serve warm.
Notes
Use fresh or frozen shrimp (thawed) for the best results.
You can substitute half-and-half for a lighter sauce.
Adjust spice levels by adding more or less red pepper flakes.
