Ingredients

  • Ground beef
  • Cooked rice
  • Onion
  • Garlic
  • Tomato sauce
  • Black beans
  • Corn
  • Green chilies
  • Shredded cheese
  • Taco seasoning
  • Olive oil
  • Salt
  • Pepper
  • Fresh cilantro (optional)

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat and cook the onion and garlic until softened.
  • Add ground beef and cook until browned. Drain any excess fat.
  • Stir in taco seasoning, tomato sauce, black beans, corn, and green chilies. Simmer for a few minutes.
  • In a large mixing bowl, combine the beef mixture with cooked rice and half of the shredded cheese.
  • Transfer the mixture to a greased baking dish. Top with the remaining cheese.
  • Bake for 20-25 minutes, or until the cheese is melted and bubbly.
